I have at my disposal a HVAC vacuum, specifically a Dayton 4Z577 model. Rated at 3.3 CFM.

Will that work as a suitable vacuum for a veneer vacuum press? Thanks in advance!

You should have no problem building a vacuum press system with that pump. Many of the dedicated press pumps operate at 1cfm. If you haven’t already, check for guidance on building a system.
