Making 5 Cutting Boards - Need Some Help

I’m going to make 5 cutting boards for Christmas and need some help in the planning. My intent is to make the brick style cutting boards using walnut as the bricks and maple or cherry as the mortar (likely maple). I’m looking for the finished boards to be about 18×12x1.5 inches and look like this before I begin, I have three questions as this is my first time making cutting boards.

What thickness walnut should I use? I’m guessing 6/4?

How much walnut do I need for these 5 boards?

Any recommendations?

Your link is broken, but I was able to find the board you were talking about by removing the extraneous characters at the end.

You’ll want to use 8/4 stock. The long grain boards will likely want to be around 1 5/8” when glued up. It looks like around that thickness, anyway. 6/4 will only get you around 1 1/4” of thickness once you mill it.
