Is the PSA adhesive backed veneer adequate between rings? Or will it give away turning stresses? Or will finishes deteriorate it with time?

I don’t have any experience with PVA-backed veneer in segmented turning, but I wouldn’t trust it. I would think there has to be some sort of substrate material between the glue and the wood, and that, IMHO, would be a potential weak spot in your glue-up.

You’d see a line of paper on the edge anyway.

I don’t know what effect your after but if its
a clean line of veneer edge I don’t think any
paper backed veneer is going to look good.
