I was going to make a desk out of a birch countertop from Home Depot, but Lumber Liquidators has one made of acacia for about half the price. According to sagulator, birch should hold up fine, but acacia is not listed. I know it’s a harder wood, and my assumption would be that that means it’s even less prone to bowing, but I have no idea if that’s true. Any input?

Sagging is unlikely to be a problem. 3/4” shelves
loaded with full-sized books sag but that’s a lot
of weight and the shelves are not that deep.
Something wider like a desk top won’t sag as
easily as you may be concerned about. Denser
solid wood boards do tend to be stiffer than less
dense ones.
