Just spent time searching and cannot find the answer to my question. What is the long term issue with these moisture pockets? How long would it take to show up as an issue in otherwise kiln dried slabs like this?

I'm in Colorado, so would probably be the same as AZ. Does this become a structural or cosmetic issue?
