I'm currently working on the Bucket Truck from Toys and Joys. They indicate you should use a router for the door lines and door handles using a 1/16" v bit or straight bit. Even with a trim router that seems too big. For those of you that do these plans how do you define the door and handle lines? Carve? Exacto knife? others. If you're using hand tools please recommend type brand and size.

You have to have a VERY steady hand to free-hand draw straight lines with a router or Dremel tool. I don't. If it's through lines, I sometimes use a small modelers table saw and thin blade. Otherwise I might ignore them or draw using ink and ruler.
Actually I consider the T&J plans to be good starting point and customize the final toy to be the way I want it.

I would suggest practicing on similar wood with an X-Acto knife to "carve" a "V" groove for the lines.
Draw the lines with a pencill and see what works for you. (or, may not). A wood burning tool is also an option.
Let us know what you come up with.

Thanks guys. I wound up using an X-Acto knife and lightly scored the lines about 6 times using a square as a guide. Then followed up with a Ramelson v gouge. I tried sharpening the gouge with a credit card diamond stone and it helped. I’m not sure I got it as sharp as it could be. Will need to read up on how to sharpen. I also used a scribe to deepen the grooves. The panels for the toolbox turned out the best. This was on hard maple.

Probably not what you want to hear, but here's my take.

I have a laser that I often use to cut templates... however, these templates could be scrolled or built up using thin straight pieces (and "sculpted" ones for the curves).

and yes, 1/16" router bits are the ideal sizes for T&J model kerfs. They templates are ideal for using a template follower attachment on a router/trimmer (trimmer recommended).
Used the above templates using a Makita trimmer on my Hummer... unfortunately that project was posted before I got a tad more verbose in my presentations so it lacks the kerfing detail.

I also made this 3D printed follower for attachment to my Foredom handset that accepts a 1/16" (1/4") router bit,
