If you happen to get to the woodworking show traveling around the US, William Ng was demoing tuning a LV low angle jack plane to take fine shavings with and against the grain. He also described how to fettle and tune a japanese plane and described operations such as the one in this video.

Kindlingmaker, I was thinking the same thing - I would gladly let him practice sharpening on my plane and chisel blades. Maybe I'll let him do my kitchen knives, jack knife and anything else I own that has an edge, too!!!
