It's a pretty soft wood. I have a few pieces that are actually portions of branches that are about 4" in diameter. I've had these mini-logs for about 5 years and I can't figure out what to do with them. The wood is a pretty dull pasty white with little grain.

I've seen glued up aspen boards. Technically, they are a hardwood (deciduous tree) but they behave like a softwood.

I can't envision doing any quality woodworking with them.

yeah aspen's tough. its used a lot for model making because it is so soft but works a little easier than pine and in my experience has a tighter straighter grain. but overall its not very good for woodworking projects. maybe bowls or something like that though.
