Help request, Identifying some wood.

Hello everyone, I'm working on a butcher block for my pantry. I purchased some wood scrap boxes and they've arrived, but they were not labeled.

I've got some guesses for most of it and I'm pretty sure the red stuff is aromatic red cedar, but I'm no expert so I was hoping some people with more trained eyes could take a look at the pictures and advise me on what they think I have so I can avoid using anything that doesn't work well in a butcher block.

2.25" thick… the larger blocks are from some felled hard maple from my yard. The smaller stuff is about 90% of these two lots of scrap, as well as the heaviest 50% of some poplar hobby boards.

Going to cut the last 10% and then some more maple for the odd pieces and some extra and then start putting it together in a nicer pattern to get it ready for gluing.
