I have those plans as well, and am making different version of Maloof chair, but I think the thickness you describe would not be an issue. one way to get a deeper seat curve with those boards, might be to Cooper the seat boards which is how the Maloof chair is (rather than a flat board.)

Key for thickness is the seat. Keep in mind that you are going to grind a large part of it away, so don't get too focused on making a perfect smooth seat blank, just to turn around and sculpt away the seat. You only really need it to be flat and smooth around the perimeter
