I milled a couple of English Elm burls about 2 years ago. The burls cost me an arm and a leg. It's super beautiful wood. I tried several ways to dry the wood and it always seems to have open burl eyes. Most of the veneer I've seen also has lots of open burl eyes. I think this is a Red Elm.

What is your experience with this wood?
