Hi all,
This is my first post. I read the rules and hope I'm doing things right. Please let me know if I'm not.

I'm building a set of saloon doors for a 30 inch opening.

I'm using these hinges

I need to know how how much space I need to leave between the doors and the opening and between the doors so that I can figure out how wide I need to make the doors.

is this project for your personal home or a commercial establishment ??

my ex-mother-in-law had these doors in her old vintage home.
the gap between the doors were just small enough to smash little kids fingers.
so, you may want to take that into consideration (regardless of what the suggested specs are)
just for safety concerns. especially if you ever expect to have toddlers in the area.

Good to know. So the gaps I need are about the size of toddler fingers

It's for my personal home. I'm actually planning to mount them low to the ground as a dog gate. They will replace an old toddler gate that the dogs figured out how to open. My girls are 11 and 13, so no toddlers in the near future (god forbid). If the dogs get noses or paws pinched, maybe they will learn that there are times they don't belong in the kitchen.

Once you buy the hinges you will figure it all out. Just by looking at the diagram online, I couldn't tell what the side clearance was. I'm not sure the instructions actually specify the dimension. I would go with 1/16" to 1/8" in the center.

The thickness of your door also makes a difference.
I could find any specs on the hinge you posted but I found another that may be helpful.
I can't imagine there is much difference but you never know.

if you do go with this type of hinge, I would double-check the screws.
IMO, they may not be up to the task of something that will be stressed a lot.
(sort of like those little pinky screws that come with a door latch assy.)

I mounted a set in our bath,

1/4" between doors
1/2" between each door and wall

I used 1-1/2" screws into the walls

I always make doors bigger than I think I need. I've learned over the years it is far easier to shave 1/16" off than to add a 1/16th.

Thanks for the advice.

I used 1 inch lumber, so it was 3/4 inches thick. The Parker hinge seems to be exactly the same as the one I used, except mine didn't come with the handy table.

See if you can figure out my latch system.

One thing that messed me up is that the distances between the sides of the opening are not consistent. It's 30 toward the bottom and closer to 30.5 in the middle of the opening. The house was built in 1917. I swear there isn't a single square angle or plumb wall in the place.

LOL Is that a dog collar? Don't despair if your old house is out of square. My last house, which was supposed to have been built 16" on center…wasn't. I should have taken pictures of the stud spacing. The builder must have paid off the inspector, is all I can say…14, 16, 18, hey, what's a couple of inches!?

Yep, dog collar. They don't know how to get them open (yet).

I'd leave the "latch" off for a while and see if it closing on their tail once or twice is enough to deter them going forward.
