I had a block of bass wood that was that size. I always use a variety of knives. When I'm roughing it out I'll use knives with a larger handle; makes the work go a little faster. But for the small thin cuts I use a number of xacto blades, some curved and some standard shape. They seem to give me more control of the very thin cuts.
There have been some times that I've made blades to suit the purpose for angles that a regular knife blade wouldn't work.

I've always found little trick wood pieces like this really amazing. I certainly don't have the skills to whittle out something like this. I would go through all my wood in storage before I would be able to get something this nicely finished out, if at all! Haha!
