Hello Walkerman welcome to Ljs.
I would not recommend building with Wood that has not been dried ,the odds are that you will end up with the top twisting and cupping and bowing along with the rest of the table. I’ve heard of some folks drying wood in ovens but have no experience doing it myself.

You could set up a solar kiln. C Schwarz is claiming you can use green wood for tops. I’m with Jim, I wouldn’t do it.
