They look like Oak, probably Red Oak, to me. The smell could be because pallets sometimes are chemically treated.

I’ve always said oak smells like baby vomit when sawn, and it looks like oak, too.

I had a similar experience with some poplar. It had a definite smell of a septic tank and I developed a sinus infection from it. Since then I’ve swore off pallet wood. It must have been treated with something.

Looks like bacterial infected oak to me. The bacteria cause the stain and the odor. It is common in Southern lowland red oaks, especially where the water table gets high, inundating the root zone for part of the year.
