I’ve had quite a few domestics impart some color when wet, but the few exotics I have used, much more than the domestics have stained a rag when wet. I’ve found as the wet substance dried, it stops, and also like you I’ve felt the wood looked clear, it was just the color on a rag when wiping while wet.

As an aside I have stopped using MO as a finish for food safe stuff, and use Poly, which once it dries is food safe, and it dries quite a bit quicker than oil finishes.

I think I would suggest not to mess with what you have, just let it dry. Putting water on a board with a wet oil finish will take just that much longer to get dry.
