You can put on an epoxy that will definitely smooth over everything. It will just be very shiny.

Epoxy is a great idea because it will self level.

You could do a poly on it but it will take a long time to build up enough layers to cover the bumps from the planks.

You could also sand it down flat and then poly it. That does lose some of the character bit gets you where you want to go.

Closing the holes will mean filling them and they may show up more or worse after you do it
