11” wide boards are much, much more likely to warp than 6” boards. Breadboard ends help keep warping in check, but they don’t eliminate the issue. If your maple is flatsawn, it will be particularly prone to cupping across its width.

I think shooting for 6-8” width will be best.

Just lay the boards out and start trimming them one by one. The lumber will tell you what it wants to become, you just have to listen.
