When I was still working I made knock down saw horses out of 3/4” ply using finger joints they were sturdy enough to set as much lumber on top as I wanted no worries. they flat packed into the back of my truck and took up very little space. Just cut your material to desired width cut a slot half the width of your uprights at whatever spacing you want your shelves the thickness of your material cut the corresponding slot into your shelving slip it all together you got yourself some knock down shelves. I used this technique on some book cases for my daughter who use to move around a lot she doesn’t anymore but still uses the book cases.
