I don’t think these would even serve a production shop well where they can have multiple sets of knives and a sharpening service they use regularly. They can just keep rotating the knives in and out with those they get back from the service, and never be without a sharpened set if they always have a set or two ready to go. Using a Tersa or some of the self-set systems, make the blade setting a non-issue. As was stated above, these can quickly get expensive.

These for the hobbyist really doesn’t make sense either. Have two sets, one in the machine and one sharp and you’re GTG. Sharpening knives with a jig isn’t all that hard or time consuming. Do the second dulled set in off time. It’s still shop time :)

Sometimes what sounds like a good idea really isn’t.
