We had buildings with untreated white oak siding that were over 100 years old and other than being grey, were as solid as the day they were built. As long as it’s off the ground and not in standing water, it won’t rot. But only the heartwood is rot resistant so a live edge may be less durable but if you keep it varnished, it may not matter. My big concern would be the top warping since live edges aren’t necessarily the choicest lumber.
