It’s overkill imo. I have an MDF router
table top from Rockler and I don’t think
it’s sealed. As long as you don’t leave
it out in the rain it should last a long time.

I’m not sure about shellacking the bottom
though. Prevailing wisdom on these matters
is that panels should be laminated or veneered
on both faces if they need to stay flat.
