If you go to the work of turning a nice piece of wood into a nice pepper or salt mill I would not recommend putting a “cheap” mechanism in it. You won’t be happy with the end results. The prices vary from $12 to $20 each.

Look for pepper grinders that are stainless steel with a coil spring tension tensioner. The spring keeps the grinder at the correct clearance for the size of grind you want. Some have several different length drive stems (aluminum) with them or you can easily custom cut the drive stem to your own size. For that reason if only one stem comes with it I always order the longest one and cut it to size. Usually you just peen over the end after you cut it.
Salt Mills should be ceramic with similar features.
