the problems are not in the wood it is in the turner. go ahead and turn it even though the MC is high. What many do is turn it but leave the wall thick, just shape it then put it in a paper bag full of wood shavings and let dry then finish. check on utube many of the major turners have done videos on turning wet wood. Look at all the turning you can get done if you don’t have to wait for it to dry
