Since you have already tried some water born finishes and it’s still has darkened the finish I’m guessing you started by using an oil base finish first that darkens the wood after that you’re just putting a clear coat over your already darkened finish.

If you want to keep it clear and no darkening, first of all, don’t use reclaimed wood and not pine, hard Maple should come out lighter, then use polycrylic or another water base only no oil base.
