I’ve worked with Olive wood – we have around 100 trees in the garden, and a number had been grubbed up when we bought the house. I wouldn’t say it was “hard” though – a finger nail can scratch it easily.
Linseed oil seems to bring out the amazing patterns the best…

Locally (here in Portugal) we can buy salad bowls, salad serving spoons, spatulas, small boxes etc etc all made from olive.
