I’m going to be honest not trying to be mean.
The first pic showing the trunk with the twist is usually a sign of wood that will misbehave.Hopefully you can get some of the slabs dry and still have something to work with.
The cross grain cuts or cookies are a waste of time they will almost certainly crack and warp.Nothing can stop that from happening.
I pass on trees from yards I’ve learned my lessons the hard way.
