If your budget allows, I would definitely go at least 30’ wide and as deep as you can afford for the shop, then have a 2 car garage. If you will talk to any realtor, if you ever sell the house, a two car garage is almost always a must have.
For your garage, you need to keep in mind todays bigger vehicles such as full size pickups and vehicles like Expeditions and Suburbans. Our town requires a minimum of 28’ wide (and 28’ deep) double car garages, for just that purpose.
I don’t know what part of the country you are in, but for your shop, you might consider something like a company like Tuff-Shed has to offer. I have one of their buildings and am very happy with it. Well built and much cheaper than conventional construction. Look them up on the web and you can see what I am talking about.
