UHMW (Ultra High Molecular Weight) plastic can warp or have deviations in thickness. Those numbers don’t sound too bad, so I think Brandon’s suggestion to shim the low spots is a good idea. I’ve also heard of people shaving off a little of the UHMW on a jointer to flatten it.
