Well, pine doesn’t stain that well, so I’d use red oak for the whole thing. It should stain in a consistent fashion. For stain, I’d use a water based Transtint die. You can mix up the die and test it on scrap wood till you find the shade you like. Actually, do the test till you find the shade your wife likes. Life is better that way.

I’d do the stain prior to the final assembly and glue-up.

I’ve made a couple of cribs in walnut, and it gave me great joy to see them in use.
