Jeff,
Being an ad-free magazine, I think they have to stick to some techniques for keeping costs down, and printing in black-and-white only is probably a huge money-saver.

In one or two issues where indicating a color was important to the topic, they would use the inside of the back cover to display the example. Chris has also been known to incorporate his blog entries with the magazine, so he can show something in color if people ask for it.

I suspect adding color to each page would also add several dollars to the cost of each issue.
