hickory smoked deer sausage

this is my 1st attempt at making smoked sausage its not a wood working project but i smoked with hickory chunks the one dosent look good that one dosent have a casing i used my gas grill and a smoker then back to the grill now i can see why its so expensive to have it done was really fun and my little buddy helped me stuff it and boy was it good i am going to get a gas smoker next year so i have more control over the temps fun fun fun

Did you use a hand rubbed finish on those? They look a bit oily still. Give them a day or two to dry and they buff them out. I think a cherry display case would be a nice touch, perhaps set them on a hand turned platter…

Oh… they’re real? How embarassing! If you stuff my mouth with susage I’ll shut up…

Envy is setting in! We didn’t get a deer this year so will have to wait for a road kill. My husband makes the best venison sausage—spicy!
