finishing #1: walnut slab bench finishing

So i have this beautiful walnut slab which i turned into a bench. Right now its all sanded to 180- planning on sanding to 220 all around. My issue is the finish! I put boiled linseed oil on a test piece i cut and i hated the way it yellowed the edges where the bark was. I want a dark look, satin finish. I don’t mind the sap/bark wood being lighter then the heart wood but closer the better i think. I have never used water based DYES iv only worked with oil stains. Any advice!? plus I’m worried about blotching on the edges if i use water based dye. Could i do a water based dye it dry, seal it, light sand, gel stain, then couple coats of an oil/varnish mix? Any advice is appreciated!
