This noodle cutter is made for my friend, Bruce, a master chef who makes a lot of noodles and cuts them one at a time. This will cut 12 3/8" noodles in one roll.
It is made from pecan, walnut and stainless steel. I started it to be all wood originally but as you can see in the 5th photo, it did not turn out so good. So, using that original roller, 13 stainless steel fender washers and a 1/2"
stainless shaft, it was reworked to a more reliable version. If I made it out of wood I was going to leave the centers in it so it could be recut if it got damaged. But since I used the steel cutters, I decided to plug the ends with walnut and finish them smooth.

It is finished with Behandla salad bowl finish.

I like the stainless washer idea how did you sharpen them ?
Is the shaft stainless also ?

Brilliant idea with the washers, Jim!

I had exactly the same problem when I tried to make one from hard maple. Your idea really makes sure that the cutting edges will remain sharp, even with heavy use.

Very clever Jim- reminds me of the noodles from scratch that my mom used to make long, long ago.

I actually like the fender washer one better then your wooden one.
It came out great and I think I'm going to have to try one of these for my daughter who makes her own noodles.
I hope mine comes out 1/2 as nice as yours.

Looks to be a very effective noodle cutter Jim. Good idea with the stainless washers. That should make it last.
I almost don't believe all the tear out, pecan has some good hardness to it. Maybe a piece of Osage will work better.

I love the fender washer idea …........ but I'm also kind of addicted to my electric pasta cutter. I guess it's the old hand tool / power tool dilemma all over again.

These washers are $.80 each locally.

They are 1/16" thick and have a .540 hole in them so I made a little mandrel with .540 diameter and a screw to hold each one on.Then I used a V tool bit in the metal lathe and took a cut on both sides to bring them to a narrow but not dead sharp edge. The shaft is 1/2" stainless steel, too.

Hi Dave. I was surprised that the pecan edge crumbled like that but it is 4 yrs old and real dry. I'm glad it happened then rather than in use!! Noodles with pecan wood chips in them would not go over too good!

Super cool Jim!

Is there a specific size difference between the O.D. of the washers and the roller? I am wondering about keeping consistent noodle thickness… Or is that done with a separate roller?

Great idea, would like to make one for my sister for christmas. I grew up on home made hand cut noodles, they have all pasted on but my sister has kept up the family tradition. Very nicely done.

I guess the ebay link is fine but when I saw who the seller was I wanted to chime in with their domain www.albanycountyfasteners.com

I have bought from them a few times and they have never paid me to say this only with the money I saved buying from them instead of the local bolt house that marks up walk in non account customers 10+ times when a person walks in for a quote…. yea companies really do this but thanks to the web www.albanycountyfasteners.com they solve that problem….

on day will will end up mail ordering every thing just to be able to find trust worthy people to do business with
